Mint Leaves are dried spearmint leaves of the species Mentha spicata. The dark green leaves have a pleasant warm fresh aromatic sweet flavor with a cool aftertaste. Dried crushed mint is used to flavour both fresh and cooked yoghurt.

It is made by first parboling wheat, then drying and grinding it to produce two grades:fine and coarse. Coarse burghul is often used instead of rice in the mountains, while fine burghul is used in salads and kibbeh.
